Rinse carefully In Utskarpen in Rana municipality, Elise Bratteng Rønning and Marius Martinsen run a restaurant and accommodation with a focus on food experiences from Helgeland. Martinsen says they use mushrooms throughout the year, but consequently mostly in season. He explains that they try to avoid using water, as it can affect the taste. – We rinse chanterelles carefully, or use a little water to remove debris, he explains. She also points out that an old wine can can be a useful tool when gathering mushrooms. – At the end of September, the funnel chanterelle arrives. You avoid that with an old wine box – and save yourself a lot of work. Pickle, dry and make risotto Over the course of a year, Martinsen & co. between eight and ten mushroom types. But which mushroom is the very best is difficult to say. – The best mushrooms are boletus and chanterelle. And funnel chanterelle. Yellow and black trumpet mushrooms are absolutely fantastic, says Martinsen, laughing. – But all edible mushrooms are good. They taste different, and not all mushrooms go with everything.
