Selon Redzepi, il s&#8217;agit du troisi\u00e8me chapitre de Noma. Noma 2.0 a ouvert ses portes en 2017 avec un nouveau menu et une nouvelle mission.  Redzepi a transform\u00e9 le terrain du quartier Christiania de Copenhague en une ferme moderne et Noma en est devenu le centre.<\/p>\n<p class=\"paragraph\"><em>Le New York Times<\/em> Dans une interview avec le magazine, Redzepi d\u00e9clare que l&#8217;industrie est difficile.  Selon lui, la cuisine et la salle du restaurant travaillent de longues et dures journ\u00e9es, et il n&#8217;est pas possible de payer un salaire suffisant \u00e0 ses 100 employ\u00e9s.  Maintenir la qualit\u00e9 et un niveau de prix appropri\u00e9 est difficile.<\/p>\n<p class=\"paragraph\">Il y a \u00e9galement eu une discussion en Finlande sur les conditions de travail des restaurants gastronomiques.
