Recette de M\u00e9lanie Dupuis, photo de Pierre Javelle, extraite de &#8220;Le grand manuel du p\u00e2tissier&#8221; (L&#8217;Ippocampo).<\/p>\n<\/div>\n<p><strong><span class=\"first-letter\">LA<\/span>INGR\u00c9DIENTS POUR 550 GRAMMES<\/strong><br \/><strong>Pour la pr\u00e9paration \u00e0 la mangue :<br \/>200 g de coulis de mangue<br \/>50 g de sucre<br \/>5 g d&#8217;agar-agar<br \/>10 g de jus de citron.<\/strong><\/p>\n<p><strong>Pour la pr\u00e9paration aux framboises :<br \/>200 g de coulis de framboise<br \/>50 g de sucre<br \/>5 g d&#8217;agar-agar<br \/>10 g de jus de citron. <\/strong><\/p>\n<article class=\"id-vda-article box_ed_hp_02-article eltdf-item-space hentry-pos-i hentry-home_section-i post-iiiii post type-post status-publish format-standard hentry\" \/>\n<h2>M\u00e9thode<\/h2>\n<p><strong>Graisser les moules<\/strong> pour les bonbons \u00e0 l&#8217;aide du pinceau.  Proc\u00e9der de la m\u00eame mani\u00e8re en m\u00eame temps pour les deux pr\u00e9parations.<\/p>\n<p><strong>M\u00e9langer l&#8217;agar-agar avec le sucre<\/strong>.  Portez le coulis \u00e0 \u00e9bullition dans deux casseroles.  Une fois \u00e0 \u00e9bullition, incorporer le sucre et l&#8217;agar-agar au fouet en faisant cuire la pr\u00e9paration pendant 2 minutes. <strong>Ajouter le jus de citron<\/strong> et cuire encore une minute.<\/p>\n<p>Verser simultan\u00e9ment dans des moules \u00e0 l&#8217;aide de deux pipettes. <strong>Placer au r\u00e9frig\u00e9rateur pendant au moins 2 heures<\/strong> avant de d\u00e9mouler.<\/p>\n<p>PS <strong>Le coulis peut \u00eatre achet\u00e9 pr\u00eat.  Pour les pr\u00e9parer \u00e0 la maison<\/strong>faites revenir 250 g de framboises dans une po\u00eale antiadh\u00e9sive \u00e0 feu doux pendant 2-3 minutes.<\/p>\n<p><strong>Ajouter 50 g de sucre en poudre<\/strong>.  Remuer, cuire 1 minute, puis filtrer dans une passoire.
